He recently returned from an Asian tour of Vietnam and China, exploring new food trends and ideas. His journey to search out new tantalizing delicacies led him to dine in the homes of locals, sample amazing street food and experience what the local eateries had to offer.
This Cordon Bleu certified chef works energetically to produce dishes inspired globally while also running his inn with much the same devotion and excitement. Numerous years of CAA/AAA Four Diamond Dining ratings and the Wine Spectator Best of Award of Excellence have allowed him the privilege to explore global inspirations for the ever-changing menus. Under the auspices of his wife, Megan Seline, the comfort of the guests and the dozen employees is never out of reach.
Weddings are a truly unique experience, hosting small intimate venues of 10 people in a private dining room, to regal events of upwards of 100 guests under the grand circular tent. As the oldest, continually operating hotel in Canada, a rich sense of history and elegance emanates from this historic property.
The bride and groom can commit their love for one another in front of the fire, on the gallery or in the gardens; choose a classic horse drawn carriage, or a champagne cruise. The sommelier is sure to please with offerings of Quebec’Äôs largest exclusive private collection of California wines.
The newly married couple find themselves drawn back to the inn year after year to rekindle their special day, as the chef recreates their gourmet wedding experience.
