Phyllo Wrapped Double Cream Brie with
Roasted Garlic and Bing Cherry Bruschetta

Ingredients

8 oz wheel Double Cream Brie
8 cloves Roasted Garlic
1 package Phyllo Pastry
1/2 cup Clarified Butter

Method

Portion brie into 4 portions. Press and rub 1-2 cloves of roasted garlic into each piece of cheese so it is a paste on top. Have butter melted or clarified and warm so it is a liquid. Take phyllo pastry out of box and put on counter. Cover with a damp kitchen towel. (Not wet or it will soak through and stick your phyllo sheets together). Lay one sheet of pastry on cutting board and brush with butter. Lay another sheet of phyllo on top and brush with butter again. Cut sheets in half. Lay cheese in center of each half and wrap nicely, like a package and then roll up the rest of the length for extra thickness. Bake in a 450°F oven for 4 to 5 minutes or just until browned. When finished put on plate and top with bing cherry bruschetta.

Bing Cherry Bruschetta

Ingredients

1 1/4 cup cherries
1/4 cup red onion
1 tsp basil
1 tbsp balsamic reduction

Method

Pit cherries and cut into small pieces. Small dice red onion, chop basil and stir all ingredients together. Add a touch of salt and pepper.
